Japchae (Korean Glass Noodles)

Japchae or Korean glass noodles has always been one of my favorite Korean dishes.  Though I am not Korean, several of my favorite foods are Korean recipes.  Japche is a popular dish to share in Korean culture during special occasions, because it symbolizes good fortune.  It is a dish usually served during Chuseok, Lunar New Year, weddings and birthdays.  According to Korean culture because of the colorful ingredients it is said that the dish bring good luck and prosperity.  

Ingredients:

-100g of glass noodles

-1/4 carrot

-1/2 onion

-mushrooms

-100g spinach

-sauce


Sauce Ingredients:

-1 tablespoon minced garlic

-3 tablespoons light soy sauce

-1 tablespoon dark soy sauce (optional, for color)

-1 tablespoon sugar

-2 tablespoons corn syrup

-1 tablespoon sesame oil

-sesame seeds (roasted) 


Recipe:

1. Soak the glass noodles in hot water for 30 minutes until smooth.

2.  Put oil in a pan on high heat and stir-fry the carrots and onions for 1 minute.

3.  Add the sauce and glass noodles to the pan.

4.  Lower the heat to low and stir everything together for 5 minutes, allowing the sauce to absorb and the ingredients to combine well.

5.  Taste and adjust the seasoning with more soy sauce or salt if needed, then plate and serve.
